Strawberry Cream Pie with Coconut Cookie Shortbread Crust
A quick and easy strawberry cream pie. The crust is a coconut shortbread style crust, that is gluten and nut free. It marries very well with the creamy strawberry filling (it's no bake!), and fresh summer strawberry topping.

INGREDIENTS
Coconut Pie Crust
- 2 Tbsp desiccated unsweetened coconut
- 9 Tbsp butter (1/2 cup + 1 Tbsp)
- 3/4 cup coconut flour
- 1 tsp vanilla
- Pinch of salt
- 2 large eggs
- 2 Tbs powdered erythritol
Strawberry Cream Pie Filling
- 2/3 cup powdered erythritol
- 1 cup (8 ounces) cream cheese
- 2 packets of unflavored gelatin
- 1 cup whipping cream
- 1 cup pureed strawberries (2 cups sliced)
- 1 Tbsp vanilla
- 1 /2 Tsp Strawberry emulsion (optional, but adds a burst of additional strawberry flavor)
Strawberry Topping
- 3 cups sliced strawberries
