🛒 Ingredients:
  • 4 boneless, skinless chicken breasts
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme (or use fresh herbs if you have them!)
  • Salt & pepper, to taste
  • Optional: lemon slices for garnish

👩‍🍳 Instructions:
Prep the chicken:
  1. Pound the chicken breasts slightly to even thickness for quicker, more even cooking.
  2. Season with salt, pepper, oregano, and thyme on both sides.
Sear the chicken:
  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook for about 5–6 minutes per side, or until golden and cooked through.
  3. Remove from skillet and cover to keep warm.
  4. In the same skillet, add the remaining 1 tbsp olive oil and garlic. Sauté for 30 seconds.
  5. Add asparagus and cook for about 3–5 minutes, until just tender but still crisp.
Add lemon flavor:
  1. Return chicken to the pan.
  2. Add lemon juice and zest, tossing everything gently to coat and heat through.
  3. Optional: top with thin lemon slices for a fresh look and extra zing.

📝 Serving suggestion:
Serve with rice, quinoa, or roasted potatoes. Drizzle with any leftover lemony pan juices!
